  2. MIX THE BATTER: Transfer ground dal to a bowl. Add onion, green chilli, ginger, coriander, red chilli powder, cumin seeds, ajwain and salt. Mix together thoroughly with your hands until everything is evenly distributed. The batter should be thick and scoopable, not pourable.
  3. TEST THE BATTER: Drop a small amount into hot oil. It should hold its shape and sizzle actively. If it falls apart, the batter needs more grinding. If it sinks slowly and doesn't sizzle, the oil isn't hot enough. Fix both before proceeding.
  4. FRY IN BATCHES: Heat oil in a karahi to 180°C (a small drop of batter should sizzle immediately and float up). Using a spoon or wet hands, drop irregular spoonfuls of batter into the oil. Don't crowd the pot. Fry for 4-5 minutes until deep golden and very crispy, turning occasionally.
  5. DOUBLE FRY FOR MAXIMUM CRUNCH: For extra crispiness, fry the pakoras, remove, let them cool for 2 minutes, then fry again for 1-2 minutes. Double frying creates the shatteringly crispy exterior that daal pakoras are known for. Drain on paper towels.
  6. SERVE IMMEDIATELY: Daal pakoras lose their crunch within 15-20 minutes. Serve them straight from the oil, piping hot, with chutney alongside.
